Couple one of these great recipes with a hot cup of tea or coffee and a glass of fresh squeezed juice and you’re sure to set the tone for a romantic and exciting Valentine’s Day.” John Ashton’s special Valentine’s Day recipe suggestions can be found below and dozens more ideas for delicious family meals, special occasions and holiday entertaining can be found on Cabot’s website at: www.cabotcheese.coop/recipes TENDER HEART CHEESY OMELET (Makes 4 Servings) 2 cups egg substitute 1 large egg 1/2 teaspoon hot sauce 1/4 cup vegetable juice, such as V-8 3 tablespoons chopped green onions 1/8 teaspoon ground black pepper 1/2 cup grated Cabot 50% Reduced Fat Cheddar (2 ounces) 1. In medium bowl, vigorously whisk egg substitute, egg and hot sauce together until very frothy. 2. In large nonstick skillet over medium heat, heat vegetable juice. Add green onions and pepper and cook, stirring until onions are tender but not browned. 3. Reduce heat to low (for tender eggs) and add egg mixture. When nearly set, distribute cheese over half. Fold omelet in half and slip onto warm serving plate. Cut into four portions. HOME-STYLE HASH BROWN PANCAKES (Makes 2 Servings) 2 large egg whites 1 teaspoon skim milk 1 large potato with skin 1/2 cup grated Cabot 50% Reduced Fat Cheddar (2 ounces) 1 tablespoon all-purpose flour 1/8 teaspoon salt 1 tablespoon canola oil 1/4 cup Cabot No Fat Sour Cream 1 green onion, green part only, minced 1. In medium bowl, whisk together egg whites and milk. 2. Grate potato into egg mixture. Stir in cheese, flour and salt. 3. In large nonstick pan over medium heat, heat oil. Drop potato mixture into pan to form two "pancakes". Cook until golden brown, about 5 minutes per side. 4. In small bowl, mix together sour cream and green onion; spoon on top of pancakes. REDUCED-FAT APPLE CHEESE MUFFINS (Makes Approximately 18 Muffins) 1/2 cup margarine 1/2 cup sugar 2 large eggs 1 cup all-purpose white flour 1/2 cup whole-wheat flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup chopped apples,peeled if desired 3/4 cup rolled oats 2/3 cup grated Cabot 50% Reduced Fat Cheddar 1/2 cup chopped walnuts 1/2 cup milk 1.Preheat oven to 375°F. Grease muffin pans or coat with nonstick cooking spray. 2. In large bowl, beat margarine and sugar with electric mixer until pale and creamy. Add eggs and beat well. 3. In another bowl, stir together white and whole-wheat flours, baking powder,baking soda and salt; stir dry ingredients into creamed mixture just until combined. Stir in apples, oats, cheese and nuts, mixing well. Stir in milk. 4. Spoon mixture into prepared muffin pans. Bake for 20 to 25 minutes, or until firm when lightly pressed on top.
